Which rafting adventure is the Gravity falls extreme?
What way would I get my most money’s worth between
Doing the following adventures:
-canyoning at the Great falls

Desafio Adventure Company (the tour operator) recently removed the mountain biking portion of their Gravity Falls Extreme Tour and we hadn’t realized (until we read your comment) that the tour option including mountain biking was still visible on our website. To clear up any confusion, the link provided above leads to the description for Desafio Adventure Company’s current Gravity Falls Extreme Tour, which includes waterfall jumping and white-water rafting.
To answer your specific question, the river that Desafio Adventure Company rafts as part of their Gravity Falls Extreme Tour is the Balsa River, which is a class II/III river (not a class III/IV river, as you reference in your initial question). To confirm, the Gravity Falls Extreme Tour (linked to above) is a coupling of the following two experiences:

Since our discounted rate for the Gravity Falls Waterfall Jumping Tour is $100 per person and our discounted rate for the Balsa River Rafting Tour is $58 per person (a total of $158 per person), the combined Gravity Falls Extreme Tour (which is $140 per person with our discount) provides an additional savings of $18 per person.
For saving the most overall, there are several great and affordable combo tours but most include the Balsa River Rafting Tour (a class II/III river) since it’s a half-day experience. Most class III/IV rivers are full-day experiences, which don’t bode well for combinations with other adventure activities experienced during the same day.
In this case, if you would prioritize saving money, I’d consider participating in a combo tour that includes white-water rafting on the Balsa River. Options include combining Balsa River rafting with either ziplining (i.e., a canopy tour, or “canopying” as you reference in your initial question), canyoning, and/or waterfall jumping. A visit to the hanging bridges (either as part of a guided tour or on your own if you’d prefer the least expensive option) can be arranged separately.

Great question! Let me clear up some things so there isn’t any confusion over the tour operator’s tours. 🙂
There is no “gravity waterfall canyoning” tour. There are, however, two distinct tours: the “Gravity Falls Waterfall Jumping Tour” and the “Lost Canyon Canyoning Tour” (sometimes called the “Canyoning in the Lost Canyon Tour”).
The Lost Canyon Canyoning Tour (this one: https://puravidaeh.ca/discounts/lost-canyon-canyoning-tour-adult-la-fortuna-desafio-adventure-company/) is primarily a canyoning (i.e., rappelling) tour. During the experience, you’ll hike through the forest and rappel down several waterfalls. The focus of this tour is the canyoning/rappelling experience, so if canyoning is what you’re after, this would be the tour to consider.
The Gravity Falls Waterfall Jumping Tour (this one: https://puravidaeh.ca/discounts/gravity-falls-waterfall-jumping-tour-adult-la-fortuna-desafio-adventure-company/) is primarily a waterfall jumping tour. During the experience, you’ll hike through the forest and cliff dive/jump off several waterfalls. Though one rappel is included with the experience, this tour isn’t a canyoning/rappelling tour per se as the focus is jumping off waterfalls. If you’d prioritize jumping off waterfalls over canyoning, this would be the better tour for you.
Both tours are different and run separately, so if you’re interested in having both experiences, you could consider participating in both.
